Chopt is honored to have hosted our longstanding partner Bill Niman at our Red Hook outpost this past week. Bill has been the reigning Godfather of grass-fed beef and a culinary thought leader since the 1970s, having played no small part in educating the American consumer on the ethics of raising and eating meat. Bill counts America’s top-tier chefs as his loyal customers, and Chopt is proud to serve BN Ranch beef in all of our restaurants. Our discerning guests, thought leaders in food policy and activism, marveled at the rich taste and lean cuts.
Bill traveled all the way from his idyllic ranch in Bolinas, California to share his story and to celebrate the cuisine of the left coast, the focus of our current round of Chopt Destination Specials. Bill inspired us with his example of the impact one man can make on the way we eat.
